Cooked Adzuki beans can be added to salads and soups. They are great in vegetarian burgers and fritters too or even smashed into dips.

How to use: To cook, pre-soak in water for 1-2 hours. Drain and place in a pot of cold water and bring to the boil. Reduce heat to simmer until tender (30-40 minutes). Drain and use, or they can go in the fridge for up to 2 days.
