Cooked black beans are popular in Mexican cooking - as a filling for burritos and tacos or as re-fried chilli beans. They can also be added to salads, soups and in vegetarian burgers.
Ingredients: Black Turtle Beans
How to use: Soak 1 cup beans in 4 cups of water for 2 – 4 hours. Drain and rinse, then place in a saucepan with 3 cups of cold water bringing to the boil. Reduce heat (to prevent bean ‘skin’ from coming off) and simmer covered for 1 ½ – 2 hours (or until soft). Drain and use (can be stored in the fridge for up to 2 days).
